All-American Blueberry Muffins
Ingredients:
1 1/2 Cups Sugar pinch
3/4 Cup Shortening soft
3 Cups Flour unsifted
3/4 Teaspoon Salt (generous)
4 Teaspoons Baking Powder plus
1/4 Teaspoon Cinnamon Ground, divided
1/2 Teaspoon Nutmeg Freshly Grated
3 Eggs large,just whites
1 1/2 Cups Milk at room temperature
1 Teaspoon Vanilla or grated peel of One Orange
1 Quart Fresh Blueberries (up to 5)
Directions:
1. Combine the sugar and shortening until fluffy.

2. Add eggs and beat again. Slowly begin adding the dry ingredients.

3. Add milk and vanilla. Mix in blueberries gently.

4. Pour into pre-sprayed muffin tins. Bake at 350 degrees for 20-30 minutes until golden.
