Baked Lemon Pudding (Diabetic)
Ingredients:
1/3 Cup Lemon Juice fresh
3 Eggs separated
5 Tablespoons Flour
1 1/2 Cups Skim Milk
1/4 Teaspoon Salt coarse
1 Tablespoon Liquid Sweetener
2 Tablespoons Low Fat Butter
Directions:
1. Combine egg whites, salt and sweetener. Beat well until peaks form.

2. Combine yolks with remaining ingredients.

3. Fold egg yolks into whites.

4. Pour into quart casserole and bake at 350 degrees for 1 hr.

5. Cool before serving.
