Directions:
1. Place paper baking cups in muffin pan, and coat with vegetable cooking spray.
2. Combine flour and next 3 ingredients in a large bowl. 3. Whisk together egg substitute and next 3 ingredients. 4. Stir in banana. Add to dry ingredients, stirring just until moistened. 5. Spoon into baking cups, filling two-thirds full. 6. Bake at 350 F for 25 minutes or until a wooden pick inserted in center comes out clean. 7. Remove from pans immediately, and cool on a wire rack. |
