Beignets (french Market Beignets)
Ingredients:
1 Unit Dry Yeast 1 Unit Pk Dry yeast
1 Unit Dry Yeast 1 Unit Pk Dry yeast
1/2 Cup Water 1/2 Cup Warm water
3/4 Cup Sugar 3/4 Cup Sugar brown
1 Unit Egg 1 Unit Egg beaten
1 Tablespoon Salt 1 Tablespoon Salt (to taste)
2 Tablespoons Vegetable Oil 2 Tablespoons Vegetable oil as needed
1 Cup Evaporated Milk 1 Cup Canned evaporated milk do not substitute
3 3/4 Cups Flour 3 3/4 Cups Flour
Directions:
1. Dissolve yeast in warm water.

2. Add beaten egg, sugar, salt, oil and evaporated milk.

3. Pour all liquid into flour, and mix well. Chill overnight (a MUST).

4. Roll out next day on a well-floured board to 1/3-inch thick or more.

5. Cut into squares with a knife. Fry in at least 2 inches of oil until brown on both sides.
