Print Brandy Wafers(Scottish) Recipe

Brandy Wafers(Scottish)
Ingredients:
2 Ounces Syrup (45 ml)
2 Ounces Butter softned
2 Ounces Flour (to 4 1/2 cups)
2 Ounces Caster Sugar (3oz)
1/2 Teaspoon Brandy or lemon juice
1/2 Teaspoon Ground Ginger (up to 3/4)
Directions:
1. Set oven to 450F or Mark Grease baking sheets.

2. Melt the butter, syrup and sugar together in a saucepan over a very gentle heat.

3. Stir in the flour, ground ginger and the brandy.

4. Beat together for about 5 minutes. Drop small teaspoonful on to the baking sheet, spaced well apart.

5. Bake for 5 minutes until pale golden brown in color.

6. Roll immediately, while still hot, around the greased handle of a large wooden spoon.

7. Set aside to cool. These are delicious filled with freshly whipped cream.
