Chandler's Crab Cakes
Ingredients:
40 Ounces Crabs 40 Ounces Dungeness crab squeezed dry
1/4 Cup White Onion 1/4 Cup White onions minced
1/4 Cup Celery 1/4 Cup Celery minced
2 Tablespoons Red Bell Peppers 2 Tablespoons Red bell pepper minced
2 Tablespoons Green Bell Peppers 2 Tablespoons Green bell pepper minced
2 Tablespoons Bell Peppers 2 Tablespoons Gold bell peppers minced
1 Tablespoon Garlic 1 Tablespoon Garlic minced
3 Eggs 3 Eggs separated, plus 2 egg yolks
2 1/2 Tablespoons Mayonnaise 2 1/2 Tablespoons Best Foods Mayonnaise
2 1/2 Tablespoons Worcestershire Sauce 2 1/2 Tablespoons Worcestershire sauce to taste
2 1/2 Tablespoons Fresh Parsley 2 1/2 Tablespoons Fresh parsley minced
2 1/2 Teaspoons Old Bay Seasoning 2 1/2 Teaspoons Old Bay Seasoning (to taste)
2 Cups Fresh Bread Crumbs 2 Cups Fresh bread crumbs ;
1 1/2 Ounces Clarified Butter 1 1/2 Ounces Clarified butter or oil
Directions:
1. Crab should be squeezed to remove juices Lightly saute vegetables, chill before mixing Whip eggs and add all spices, etc.

2. Mix crab, vegetables and egg mixture well. Shape into 2-1/2 ounce patties.

3. Coat patties lightly with fresh bread crumbs Pan-fry in clarified butter at medium-high heat until golden brown and heated through.
