Chicken Wonton Soup
Ingredients:
6 Ounces Ground Chicken or turkey (up to 1-1/4)
2 Tablespoons Egg Substitute
3 Tablespoons Soy Sauce divided
1 Tablespoon Hoisin Sauce plus additional to taste
1 Tablespoon Vinegar
1 Tablespoon Sugar or thai kitchen coconut; (palm) sugar
2 Teaspoons Cornstarch about
1/4 Teaspoon Ground Ginger (optional)
1/4 Teaspoon Pepper ; crushed
1/4 Teaspoon Green Onion (divided)
8 Unit Egg Roll Wrappers
4 Cups Chicken Broth (preferably home-made)
Directions:
1. In a lg bowl, combine chicken, egg substitute, 1 T soy sauce, hoisin sauce, vinegar, sugar, cornstarch, ginger, and pepper.

2. Mix well. Stir in 2T green onions. Cover bowl with plastic wrap' refrigerate for 15 minutes.

3. Spoon chicken mixture evenly into center of each roll wrapper.

4. Brush corners with water; press together to seal.

5. In a lg. pot, bring 2 quarts of water to a boil over high heat.

6. Add wontons. Cook, stirring, until wontons float to surface, about 10 minutes.

7. Meanwhile, in a medium saucepan, bring broth to a boil over medium heat.

8. Add remaining soy sauce. Divide wantons evenly among individual serving bowls.

9. Ladle broth mixture over wontons. Sprinkle with remaining green onions.
