Chocolate Mayonnaise Cake
Ingredients:
1/2 Teaspoon Salt 1 t.
1 Teaspoon Vanilla 1/4 tsp if Watkins
1 Cup Sugar (for decoration)
1 Cup Mayonnaise Lowfat-Ok
2 Teaspoons Baking Soda (dissolved in a little warm water)
2 Cups Flour unbleached white
1/2 Cup Cocoa
1 Cup Coffee strong
Directions:
1. Combine dry ingredients in a large mixing bowl, tossing lightly with a spoon to mix.

2. Combine the mayonnaise, coffee, and vanilla in a smaller bowl; add to the dry ingredients, beating with the mixer on medium for three minutes.

3. Generously grease a baking pan, then dust with cocoa.

4. Bake at 350 F For a layer cake, bake 20 minutes; for a sheet cake, bake 25 minutes; for a bundt cake, bake 45 minutes.

5. If it falls, don't throw it out---it masquerades as wonderful brownies.
