French Chicken
Ingredients:
1 Tablespoon Salt pinch
6 Chicken Breasts or legs with thighs
2 Cloves Of Garlic sliced
1 1/2 Tablespoons Butter clarified **
1/2 Teaspoon Pepper small/chopped
4 Tablespoons Flour white or unbleached
2 Cups Milk scalded
3 Tablespoons Chives chopped
2 Shallots peeled
Directions:
1. Season chicken breasts and saute 20 minutes.

2. Preheat oven to 500. Sauce melt butter and add flour stir constantly.

3. Gradually add milk. When smooth add salt and pepper.

4. Let thicken and turn off heat. Place chicken in large covered casserole Set aside.

5. Squeeze shallots and garlic through press into sauce.

6. Add chives and stir thoroughly. Pour over chicken.
