Fruity Seafood
This is a quick and easy seafood curry for the summer months when fresh fruit is cheap. The cream offsets the heat of the curry and complements the sweet flavors of the fruit.
Ingredients:
3 tablespoons Butter
4 Shallots chopped
1 Green Apple peeled cored and diced
1 Dill pinch
2 teaspoon Mild Curry Powder
2 tablespoons All-Purpose Flour
1 cup Apple Juice
1 lb Scallop
1 Banana sliced
1/2 lb Shrimp uncooked
1/2 cup Cream
Salt to taste
Directions:
1. Melt butter in saucepan, saute apple and shallots until soft.

2. Add curry powder and cook for a minute longer.

3. Stir in flour, add apple juice.

4. Bring to boil, stirring constantly.

5. Add salt and dill, simmer for 5 minutes.

6. Add prawns and scallops, cook until almost tender, add banana 5 minutes before end of cooking time.

7. Stir in cream, heat through.
