Gorgonzola Sauce
Ingredients:
2 Tablespoons All-Purpose Flour sifted
2 Tablespoons Butter clarified **
1 Cup Milk up to 1
1/2 Pound Gorgonzola Cheese crumbled
Directions:
1. Heat the butter in a 2-quart saucepan.

2. Add the flour and cook together to form a roux.

3. Do not Brown! Add the milk and whisk together until smooth.

4. Bring to a simmer, stirring regularly until thickened.

5. Add the Gorgonzola and stir until all is incorporated but still a bit lumpy.
