Open Face Mushroom Brie Sandwiches
Ingredients:
2 tablespoons Olive Oil
1 1/2 cups Mushrooms trimmed assorted
1 teaspoon Garlic minced
1/2 cup Onion finely diced
1 tablespoon Red Wine Vinegar
1 tablespoon Water
Salt to taste
Pepper to taste
2 tablespoons Parsley finely chopped
4 slices Wholemeal Bread
4 slices Brie Cheese
Directions:
1. Heat the oil in a skillet and add the mushrooms, garlic, onion, vinegar, water, salt and pepper.

2. Cover and cook 3 minutes. Remove the cover and cook until mushrooms are tender, another 5 minutes.

3. Remove from the heat, transfer the mushrooms to a bowl and add the parsley.

4. Toast or grill the bread. Preheat a broiler. Place the bread on a baking sheet and top with mushrooms.

5. Lay a piece of cheese on top and place under the broiler until melted.
