Pesto Chicken
Ingredients:
1 Tablespoon Olive Oil
4 Tablespoons Pesto
1 Cup Mushroom Sliced
4 Boneless Chicken Breasts skinless chicken breast halves
4 Ounces Mozzarella Cheese thinly sliced
Directions:
1. Place the chicken breasts between sheets of wax paper and pound until thin.

2. Sprinkle with salt and pepper. In a large skillet, heat the oil over medium heat and lightly brown the chicken on both sides.

3. Remove the pan from the heat. Spread 1 tablespoon pesto over each chicken breast.

4. Cover each piece with a slice of cheese. Place the mushrooms in the pan around the chicken.

5. Cover and cook over low heat for about 10 minutes or until done.
