Print Rice Pudding Recipe

Rice Pudding
This rice pudding is fluffy and light, yet inexpensive and a healthy dessert. Made with skim milk, it's limited in calories, yet delicious.
Ingredients:
1/2 cup Basmati Rice
1/2 cup Raisin
2 cups Skim Milk
1 cup Non-Dairy Whipped Cream
1 teaspoon Vanilla
6 Mint Leaves Sprigs
3 teaspoons Sugar
Directions:
1. Soak rice in 1/4-cup water for approximately 1 hour, then cook rice in same water until thick.

2. Add skim milk. Cook slowly stirring occasionally until thickened, but stop cooking before all of the liquid is absorbed.

3. Allow to cool, then add vanilla, sugar, and raisins.

4. Fold in whipped topping. Spoon into 6 serving dishes.
