While traveling in Argentina, I discovered one of my most favorite foods. Empanadas! During our work with Recipe Key, we often discuss our favorite foods from our various travels around the world. Empanadas have a special place in our heart because they can be personalized and specialized for whoever is making them. We’ve made breakfast empanadas with eggs and bacon, dinner empanadas with ground beef and chili sauce, and dessert empanadas with fruit filling and cream. What a treat! Have you ever used a slow cooker or a crockpot? My mother gave me her crockpot about a year ago because it had been sitting in her cabinet, used only a handful of times in the past 10 years. As soon as she gave it to me, I began dreaming up all of the fabulous meals I could throw together in the morning and enjoy after getting home from work in the evening. Most recently, I’ve made Homemade Applesauce, a Spicy Rum Cider, Pulled Pork. The pulled pork was to die for! I added the ingredients to the crockpot at about 11AM one evening and by 6PM – the meal was complete! So juicy and flavorful, the meat fell right off of the bone. For those on-the-go parents or working individuals – this is a great solution for you!
