Hungry? What college student isn’t? That’s why we’re kicking off this first Recipe Key Newsletter with two quick, easy and delicious recipes that you can use when you’re scrounging for some food. Oh, and just for fun, we’ve got a drink recipe that’ll be just right for your next party. But let’s start with the food…It’s lunchtime and once again, you haven’t had a chance to go grocery shopping. While traveling in Argentina, I discovered one of my most favorite foods. Empanadas! During our work with Recipe Key, we often discuss our favorite foods from our various travels around the world. Empanadas have a special place in our heart because they can be personalized and specialized for whoever is making them. We’ve made breakfast empanadas with eggs and bacon, dinner empanadas with ground beef and chili sauce, and dessert empanadas with fruit filling and cream. What a treat! Empanadas are also a great dinner party idea. Try making an assortment of them and let your guests mix and match the ones they’ll try.

 Garlic Lime Salmon
My brother is just discovering the world of cooking. He and his roommates have been experimenting with a different recipe every night. This delicious salmon recipe was one of the first recipes they tried. Amazingly, it turned out great! They devoured it, according to his after-dinner report. And it’s simple. While growing up, he watched my mom spend hours in the kitchen each day and so when he realized that he could so easily and so quickly make something this delicious, he was amazed! Over Christmas, my mother tried the recipe and loved it as well. Proof that a good recipe can be successful across generations.

Chicken Marsala is a favorite of mine to order when eating out at a restaurant. However, this dish is an easy one to make at home and enjoy more often than when just eating out. Get creative by using red wine instead of white. Add a variation of mushrooms. Try it with veal or thinly pounded beef. The cooking world is your oyster.
