BARLEY CASSEROLE #2
Ingredients:
1/2 Pound Fresh Mushrooms (optional)
1 Onion finely chopped
4 Tablespoons Butter (softened)
1 Cup Barley uncooked
3 Cups Beef Broth (12 oz)
Directions:
1. Saute mushrooms and onions in butter.

2. Don't let onions brown. Mix in barley, salt and pepper.

3. Pour into buttered 1 1/2 qt casserole. Cover with broth to 1/2 inch above barley.

4. Cover and bake at 350 degrees for 45 minutes, until liquid is absorbed and barley is tender.
