Baked Omelette
1 Egg
1 Ounce Butter or margarine
1 Pound Potato
1/2 Pound Cheddar Cheese
1. Boil and mash potatoes, mix potatoes, grated cheese, beaten egg and butter together, season with mustard, pepper and salt to taste.

2. If too stiff add a little milk. Pour into a buttered dish and bake until light brown (about 15 minutes in quick oven).
