Bavarian Potato Salad
2 Tablespoons Lemon Juice fresh, not bottled
1/2 Teaspoon Salt pepper to taste,
1/4 Cup Vegetable Oil PLUS:
1/2 Teaspoon Sugar (or less, to taste)
1/3 Cup Onion chopped
4 Cups Potatoes *
2 Cups Chicken Broth **
1. Boil potatoes in broth with 1/4 ts salt for 5 to 8 minutes, until tender.

2. Drain. Toss warm potatoes with vegetable oil and onions.

3. Dissolve remaining 1/4 ts salt and the sugar in lemon juice.

4. Pour over potatoes. Marinate salad 1 to 2 hours before serving.

5. Serve at room temperature. * Potatoes should be peeled and sliced 1/4-inch thick.

6. ** Chicken broth may be either home made or commercial.
