Chilled Avocado Soup With Shrimp
Ingredients:
1 1/2 Pounds Avocados peeled and halved (3 to 4)
2 1/2 Cups Stock chicken
1/2 Cup Buttermilk room temp
1 Tablespoon Lemon Juice depending on the
1/2 Teaspoon Lemon Peel grated
1 Clove Of Garlic crushed
1/2 Pound Shrimp peeled/deveined, up
Directions:
1. Peel, pit, and cube avocados.

2. Puree in blender or food processor. Add stock, buttermilk, lemon juice, peel, and garlic and process until smooth.

3. Salt and pepper to taste. Cover and refrigerate until well chilled.

4. Rinse and drain shrimp. Ladle soup into chilled bowls and garnish with shrimp and parsley.
