Chilled Tomato and Red Pepper Soup
Ingredients:
2 Tomatoes peeled, seeded, and chopped
3 Cups Ice
3 Tablespoons Olive Oil EVOO
1 Tablespoon Parsley chopped
1/4 Onion chopped
1 Clove Of Garlic minced
1 Red Pepper roasted
Directions:
1. Process tomatoes, red pepper, onion, garlic, olive oil, salt, pepper and ice cubes in a food processor until finely chopped but not completely smooth.

2. Stir in another 3 ice cubes and the parsley. Chill.
