Crazy Crust Pumpkin Pie (Makes Its Own Crust)
Ingredients:
1 Teaspoon Baking Powder
1/2 Teaspoon Salt 1 t.
2 Tablespoons Sugar (for decoration)
1 Egg whites room temperature
Cup Vegetable Shortening chilled
Cup Evaporated Milk 13 oz. can
1/2 Teaspoon Cinnamon (generous)
1 Cup Flour plus additional
3/4 Cup Water cold
1 Pound Pumpkin cookedcan
Directions:
1. Combine all ingredients for crust.

2. Blend well at lowest speed of mixer, then beat two minutes at medium speed.

3. Spread batter in 9 or 10" deep dish pie pan.

4. Combine filling ingredients and beat on low until well blended.

5. Pour carefully into center of batter. DO NOT STIR.

6. Bake at 425 for 40-45 minutes until crust is golden brown.

7. To make a CHERRY FILLING: Use 1 can cherry pie filling.
