Deep-Fried Crabs
1/2 Teaspoon Salt 1 t.
6 Crabs
2 Eggs Hard Cooked
1/2 Cup Flour plus additional
1. Place crabs on a heatproof platter and steam 10 minutes.

2. See "How-to Section". Clean and shell crabs; remove claws but not legs.

3. Cut each crab in 4 to 6 sections, leaving a leg on each as a "handle.

4. " Beat eggs lightly and blend to a smooth batter with flour and salt.

5. Dip crab sections in batter to coat. Heat oil.

6. Add crab sections a few at a time and deep-fry until golden.
