Grilled Vegetable Soup
Ingredients:
8 Tomatoes peeled if desired,
2 Cloves Of Garlic chopped
2 Red Onions sliced
2 Zucchini sliced
2 Tablespoons Rosemary chopped
2 Yellow Squash sliced
3 Red Bell Peppers roasted and peeled
Directions:
1. Grill all vegetables except garlic.

2. In food processor place all ingredients, except 1/2 cup vegetables.

3. Process until smooth. Season with salt, pepper, lemon and rosemary.

4. Dice remaining 1/2 cup vegetables . Serve hot or cold with diced vegetables sprinkled on top.
