Honey Bran Muffins
3/8 Cup Raisin or currants
3/4 Tablespoon Baking Powder very important
3/8 Cup Honey Or Maple Syrup
1 Egg Hard cooked chopped
2 Tablespoons Vegetable Oil (60 ml)
1 1/3 Cups Flour sifted
1 1/8 Cups Milk warm
2 1/4 Cups Cereal bran
1. If using sweetened cereal, only use half the amount of honey.

2. Preheat oven to 400. Stir together flour and baking powder.

3. In large mixing bowl, beat together milk, honey, egg, and oil, until thoroughly mixed.

4. Add flour mixture, cereal, and raisins, stirring only until combined.

5. Portion batter evenly into greased muffin cups.

6. Bake about 25 minutes, until lightly browned.
