Jewelled Fruitcake Miniatures
Ingredients:
1/2 Teaspoon Baking Powder
1 1/2 Teaspoons Vanilla ----topping-----
3/4 Cup Flour * (6 to 7)
1 1/2 Cups Brazil Nuts chopped
3 Eggs hard cooked
1 Cup Candied Pineapple cut up
8 Ounces Dates cut up
1/2 Teaspoon Salt optional
3/4 Cup Sugar pulverized
8 Ounces Dried Apricots cut up
1 Cup Maraschino Cherry drained, cut in half
Directions:
1. Heat oven to 325 degrees.

2. Place paper nut cups or miniature paper cups on baking sheet.

3. Mix ingredients thoroughly. Spoon about 1 tablespoon into each cup.

4. Bake for 25 minutes or until a toothpick comes out clean.

5. If they are getting too dark cover with tinfoil the last 10 minutes Cool completely.

6. Wrap securely and store in refrigerator. Makes about 3 1/2 doz.
