Pasta and Pine Nuts
1 Cup Heavy Cream cold
1/4 Cup Butter (1/4 stick) cut into 6 pieces
1/4 Cup Flour all purpose
1 Shallot chopped
1/2 Cup White Wine (optional)
1/4 Cup Pine Nuts toasted
1 Tablespoon Dill or
1 Teaspoon Basil to taste
8 Ounces Spaghetti cooked and drained
1. Melt the butter (or margarine) in a saucepan.

2. Whisk in the flour, and whisk until smooth and thickened.

3. Gradually add heavy cream and wine, stirring constantly until smooth.

4. Add dill (or preferred herbs) pine nuts and salt and pepper to taste.

5. Thin the sauce with additional cream if necessary.

6. Toss with prepared noodles. This sauce is also very good served over fish.
