Shrimp Ceviche
1 1/2 Cups Orange Juice chicken stock or low-sodium chicken stock
1/2 Cup Lemon Juice fresh
1 Onion sliced thin
1 Pound Shrimp peeled
1/4 Cup Ketchup (optional)
1. Cook shrimp in boiling salted water for 3 minutes - NO MORE! Allow to cool and remove shells and devine.

2. Cut shrimp into two or three pieces depending on size.

3. Add the juices, salt and pepper, ketchup, hot sauce, and onion.

4. Leave in refrigerator for several hours before eating.
