Spicy Black Beans With Tomatoes and Onions
Ingredients:
2 Tablespoons Butter (1 1/2 Lbs.)
2 Tablespoons Olive Oil EVOO
1 Onion chopped
2 teaspoons Garlic minced or pressed
1 Green Bell Pepper seeded
1 Red Bell Pepper seeded
2 Cups Black Beans cooked
1/2 Teaspoon Salt ; (optional)
6 Plum Tomatoes peeled
2 Tablespoons Olive Oil use a good grade
1/4 Cup Cilantro freshly chopped
1/4 Teaspoon Cayenne Pepper ground
5 Parsley for garnish
Directions:
1. In a large saute pan, heat the butter and olive oil over medium heat.

2. Add the onion, garlic, and green and red peppers, and saute 4-6 minutes, until onions are translucent and vegetables are tender.

3. Add the black beans and salt to taste. Add tomatoes and olive oil.

4. Let cook another 5 minutes, until hot throughout.

5. Add cilantro and mix well. Add cayenne pepper to taste and serve hot, garnished with sprigs of parsley.
