Stir-Fried Chicken with Cashew Nuts
Ingredients:
450 Grams Chicken Breasts boneless and
2 Tablespoons Sesame Oil toasted
2 Cloves Of Garlic crushed
3 Red Chili Peppers finely chopped
1 Red Pepper sliced julienne
2 Tablespoons Oyster Sauce (optional)
1 Tablespoon Soy Sauce more as needed
1/2 Teaspoon Sugar (optional)
6 Spring Onions sliced julienne
1/2 Lime juice of
Directions:
1. Slice the chicken thinly, lengthwise.

2. Heat the wok and add the sesame oil. Add the garlic, then the chillies.

3. Add the slices of chicken and stir fry for 2-3 minutes.

4. Add the julienne of red pepper and spring onions and fry for 1 minute.

5. Stir in the oyster sauce, soy sauce, sugar and cashew nuts and stir for another 1-2 minutes - finely sprinkle with the lime juice.

6. Place into a dish and scatter with coriander leaves.
