3 Packages Yeast cake
1 Tablespoon Sugar
8 Cups Milk
Cup Shortening melted
1 Cup Sugar
1/2 Cup Molasses divided
2 Tablespoons Salt to 1 ts
12 Cups Whole Wheat Flour ;

1. Dissolve yeast in 2/3 c water while your milk is cooling.

2. Dissolve 1 cup sugar in the hot milk. Stir all ingredients in large bowl, turn out and knead about 5 minutes, adding flour if needed.

3. Knead about 5 minutes. Let rise until doubled in bulk, about 1 1/2 to 2 hours.

4. Knead down and shape into 6 loaves, let rise until doubled in pans.

5. Bake at 375 degrees F for 40 minutes. Turn out on wire rack and let cool to cold before slicing, if you can.

6. NOTE: Raisins and/or walnuts can be added for a change.

The ingredients &/or directions are not very clear - no indication of heating the milk until step 2. although in step 1 it says "while milk cooling". Is the milk heated to ?? simmer? scald? boiling? Thanks
