ASPARAGUS WITH SHALLOTS

A different kind of asparagus recipe that is quick and sounds interesting. With addition of oil and onions you have an elegant dish.

Ingredients:

1 1/2 Pounds Asparagus fresh
1 Dash Salt to 1 ts
3 Teaspoons Peanut Oil or olive
2 Unit Shallots peeled and minced
1 Dash Parsley

Directions:

1. Snap off tough ends of asparagus.

2. If asparagus is thick, old or tough, peel bottoms.

3. Add asparagus to pan of boiling salted water.

4. Boil gently until cooked--bright green and tender--but still firm, about 5 to 8 minutes.

5. Remove; drain on towel; put on platter and drizzle with oil, lifting spears to coat.

6. Sprinkle with shallots and parsley. Salt slightly.
