Agliata Per Pasta (Garlic and Walnut Sauce for Pasta)

Ingredients:

6 Tablespoons Olive Oil
3 Cloves Of Garlic chopped
1/2 Teaspoon Salt coarse
1/8 Teaspoon Ground Pepper
2 Slices Italian Bread stale, crusts removed
2 Tablespoons Stock warmed
1 Cup Walnut toasted
1/2 Cup Parsley stems trimmed

Directions:

1. Soak the bread in the stock & then squeeze out any excess moisture.

2. Combine the bread with the walnuts, parsley, garlic, salt & pepper in a food processor.

3. Process, adding the olive oil in a very slow stream until you have a thick paste.

4. Toss with your favorite pasta & serve hot.

I do 6 oz steamed artichoke quarters instead of the bread, and a little more stock. Also, dice the garlic before processing tominimize chunks that bite. wib411
