Ingredients:

1 Egg lightly beaten
1/2 Cup Sugar
1/2 Teaspoon Cinnamon
1/4 Cup Vegetable Oil
2 Teaspoons Baking Powder
1 1/2 Cups Flour
1/2 Cup Applesauce
1/2 Teaspoon Salt coarse
1/2 Cup Milk

Directions:

1. Beat egg; stir in milk, oil, and applesauce. Mix in remaining ingredients just until flour is moistened.

2. Batter should be lumpy.

3. Grease muffin cups or line with paper baking cups; fill 2/3 full. Mix together 1/2 tsp. cinnamon and 2 Tbsp. sugar. Sprinkle on top of muffins.

4. Bake in 400-degree oven for 20 to 25 minutes.

5. Serve warm with fruit preserves.
