Albacore Vegetable Pilaf

1 cup White Rice uncooked
1/2 cup Red Pepper each diced green
Broccoli zucchini
Corn or
2 1/2 cups Mixed Vegetables thawed
14 1/2 oz Chicken Stock can
1/4 cup Water
2 tablespoons Lemon Juice
1 cup Sour Cream dairy
1 teaspoon Dill
1/2 teaspoon Salt
1/4 teaspoon Pepper
12 oz White Tuna can
1/4 teaspoon Garlic Powder

1. In heavy 1 1/2 qt.

2. saucepan (with a tight lid) combine rice chicken stock, water, lemon juice, dill, salt, pepper and garlic powder.

3. Bring to a boil, cover, reduce heat and simmer 20 minutes.

4. Stir in vegetables,cover and continue cooking 5 more minutes or until all the liquid is absorbed.

5. Blend in sour cream and Albacore. Serve hot or cold.
