Almond Crumb Chicken

This twist on basic fried chicken adds the savory flavors of Parmesan cheese and basil to a crunchy coating of dried bread crumbs and almonds.

Ingredients:

1 oz Blanched Almond ground
1 tablespoon Dried Bread Crumbs plain
1 1/2 teaspoons Parmesan Cheese grated
1/8 teaspoon Salt
1/8 teaspoon Leaves Basil
8 oz Cutlets Chicken Breasts divided
1 tablespoon Skim Milk
1 tablespoon Vegetable Oil

Directions:

1. Pound chicken cutlet to 1/8 inch thickness. On sheet of wax paper combine ground almonds, bread crumbs, cheese, salt and basil.

2. Dip 1 chicken cutlet into milk, then into crumb mixture, coating both sides evenly; repeat procedure with remaining cutlet, being sure to use all of milk and crumb mixture.

3. Heat oil in skillet.

4. Add chicken and coat, turning once, until browned on both sides, 3 to 4 minutes on each side.

5. Serve with lemon wedges.
