Almond Potato Cake

This is a cool dessert with potatoes and almonds. Tasty and healthy too. Weekends can be made special with this dish


1 cup Water
1/2 teaspoon Salt
2 cups Instant Mashed Potatoes
1/3 cup Butter
1 cup Sugar
2 Eggs
3/4 teaspoon Almond Extract
3/4 cup Almond Ground

1. Boil water and salt, remove from heat and stir in potatoes.

2. Cool. Cream butter and sugar until light. Beat in eggs one at a time, then almond extract, almonds and cooled potatoes.

3. Turn into a greased and floured 8 inch square baking pan.

4. Bake 350 for 50 minutes or tested done. Cool in pan 10 minutes.

5. Remove from pan and cool completely. Sprinkle with powdered sugar.
