Ingredients:

1/2 Cup Butter 1/2 Cup Butter (1/4 stick) cut into 6 pieces
2 Tablespoons Molasses 2 Tablespoons Molasses divided
2 Unit Eggs 2 Unit Eggs separated, plus 2 egg yolks
1 Cup Almond 1 Cup Ground toasted almonds
1/2 Teaspoon Lemon 1/2 Teaspoon Grated lemon rind
1 Teaspoon Almond Extract 1 Teaspoon Almond extract or up to 3/4 teaspoon
1/2 Cup Amaretto 1/2 Cup Amaretto plus 3 tablespoons
2 Cups Whole Wheat Pastry Flour 2 Cups Whole wheat pastry flour &

Directions:

1. Cream together butter and molasses.

2. Add eggs, ground almonds, lemon rind and almond extract; mix well.

3. Stir in Amaretto alternately with flour. Drop by teaspoonsful onto unoiled cookie sheets.

4. Bake at 350 degrees for 12-15 minutes. Cookies will be golden brown when done.
