Amaretto Whisper Cheese Cake

Ingredients:

1 1/2 Cups Chocolate Wafers 1 1/2 Cups Chocolate wafer crumbs ;
1 1/2 Cups Chocolate Wafers 1 1/2 Cups Chocolate wafer crumbs ;
1 Cup Almond 1 Cup Almonds finely chopped and lightly toasted
3/4 Cup Butter 3/4 Cup Butter softened
1/3 Cup Sugar 1/3 Cup Sugar
3 Unit Cream Cheese 3 Unit 8 oz. packages cream cheese softened
1 Cup Sugar 1 Cup Sugar
4 Unit Eggs 4 Unit Eggs separated, plus 2 egg yolks
1/3 Cup Heavy Cream 1/3 Cup Heavy cream to taste
1/4 Cup Amaretto 1/4 Cup Plus 1 teaspoon Amaretto
2 Cups Sour Cream 2 Cups Sour cream light or dairy
2 Tablespoons Sugar 2 Tablespoons Sugar
1 Teaspoon Amaretto 1 Teaspoon Amaretto plus 3 tablespoons
1 Unit Almond 1 Unit Lightly toasted slivered almonds (for garnish)

Directions:

1. CRUST: Combine crumbs, almonds, butter and sugar in a bowl.

2. Press into bottom and sides of a 9-inch springform pan.

3. FILLING: Cream cheese and sugar together in a large mixer bowl.

4. Add eggs, one at a time, beating well after each addition.

5. Add cream and Amaretto. Beat until light. Pour into crust.

6. Bake at 375 degrees F for 40 minutes. Let stand for 5 minutes on wire rack.

7. Filling will not be set. TOPPING: Combine sour cream, sugar and Amaretto.

8. Spread evenly on cake. Bake 5 to 10 minutes; top will still be jiggly in center.

9. Cool completely on rack. Cover lightly and chill overnight.

10. Remove from springform pan. Place almond slivers around outside edge of top of cake.

11. Serves 10 servings. Source: Cooking for Applause.
