Angel Hair Pasta With Tomato-Scallop Sauce

Ingredients:

1 Package Scallop
2 Tablespoons Olive Oil or lard
1 Onion chopped
1 Bell Pepper chopped
1 Centiliter Garlic minced
2 Cans Tomatoes
1 Teaspoon Oregano or other herbs
1 Unit Pepper
1 Pound Angel Hair Pasta

Directions:

1. In a skillet, combine oil, onion, bell pepper and garlic.

2. Saute on stove top over medium heat until vegetables are tender (do not brown).

3. Add tomatoes, oregano, salt and pepper, and bring to a boil for 1 minute.

4. Reduce heat and simmer for 10 minutes. Add scallops and simmer another 3 minutes.

5. Serve warm sauce over pasta. Top with grated Parmesan cheese (if desired).
