2 Quarts Water 2 Quarts Water more if needed
1 Unit Ham 1 Unit Bone from baked ham*
1 Unit Bay Leaf 1 Unit Bay leaf ground
3 Unit Parsley 3 Unit Parsley (optional)
1 Unit Onion 1 Unit Onion large
1 Unit Salt 1 Unit Salt to 1 ts
1 Unit Pepper 1 Unit Pepper hot red

1. Cover the beans with water and soak overnight.

2. Drain beans and place in soup pot, add water, ham bone, bay leaf, parsley, onion.

3. Bring to a boil, then lower heat, partially cover, and let simmer very gently until the beans are tender.

4. Add more water if needed. Remove and discard bay leaf.

5. Remove ham bone, cut off all meat, and return it to the pot.

6. Remove about 1 cup of the beans and a little bean liquid.

7. Mash to a paste and stir this into the pot to thicken soup.

8. Add salt and pepper to taste. If desired, thin soup with milk.
