Ingredients:

1 Cup Unsalted Butter softened
2 Tablespoons Maple Syrup (1 1/2 T)
1 Cup All-Purpose Flour
1 Teaspoon Baking Powder
1 Cup Oats (3/4 C)
1 Cup Coconut
1 Cup Sugar Brown

Directions:

1. Pre-heat oven to 350-F degrees.

2. In a medium mixing bowl, cream together the butter and maple syrup with a hand-held electric mixer.

3. Add flour, baking powder, rolled oats, coconut, and sugar; mix well.

4. Roll the dough into 2-inch balls and place well apart on a thoroughly greased baking sheet.

5. Bake for about 15 minutes, or until golden. Cool on the baking sheet before removing to store in an airtight container for up to 2 weeks.
