Ingredients:

2 Teaspoons Sugar
1/4 Teaspoon Salt to taste
1/2 Cup Milk
1/4 Teaspoon Cinnamon Ground
3/4 Cup Butter or margarine
Cup Flour Unbleached, Unsifted
4 Eggs Large, Beaten
2 Cups Apples Slices

Directions:

1. Sift together the flour, 2 t sugar, and the salt.

2. Beat eggs and milk together. Gradually add flour mixture; beat until smooth.

3. Saute apples in 1/4 c of butter until tender.

4. Mixture 2 T sugar and the cinnamon together; toss with apples.

5. Melt 2 T butter in a 6-inch diameter, deep fry pan.

6. Pour in the batter to a depth of about 1/4-inch.

7. When set, place 1/4 of the apples on top; cover with more batter.

8. Fry pancake until lightly browned on both sides.

9. Keep warm. Repeat the procedure 3 times, until all batter and apples are used.
