Apple And Butternut Squash Soup

Ingredients:

3 Tablespoons Unsalted Butter softened
1 Onion chopped
2 Tablespoons Curry Powder
1 Teaspoon Chili Powder (up to 8)
2 1/2 Cups Chicken Broth (14 1/2 oz. each)
3 Pounds Butternut Squash peeled
21 Ounces Granny Smith Apples peeled
1/2 Cup Heavy Cream Scalded (Heated just until
1 Tablespoon Fresh Parsley chopped
1 Tablespoon Fresh Cilantro chopped

Directions:

1. In a large heavy pot, melt butter over medium heat.

2. Add onions and saute until translucent, about 5 minutes.

3. Add curry powder and chili powder. Mix well.

4. Cook, stirring occasionally, 5 minutes. Stir in 2 1/2 cups chicken broth, squash, apples, and salt and pepper to taste.

5. Bring to a boil. Reduce heat. Cover and simmer 30-45 minutes until squash is very tender, stirring occasionally.

6. Strain soup, reserving liquid. Puree vegetables in a food processor in several batches.

7. In same pot, combine vegetable puree, reserved cooking liquid, cream, and 2 1/2 cups chicken broth.

8. Bring just to simmering. Ladle soup into warm bowls.
