2 Eggs at room temperature
3/4 Cup Honey
1 Cup Sugar
1 Teaspoon Vanilla
1 Teaspoon Baking Soda
1 Teaspoon Salt to taste
1 Teaspoon Cinnamon
1 Cup Vegetable Oil
1 Teaspoon Baking Powder
2 1/2 Cups Flour
1/4 Teaspoon Allspice
3/4 Cup Walnut chopped
3 Cups Apples peeled and coarsely

1. Mix sugar and oil. Add eggs and beat until creamy.

2. Slowly pour in honey and add vanilla.

3. Combine salt, soda, baking powder and spices with the flour and add a little at a time, beating continuously. By hand, stir in the apples and nuts.

4. Pour batter into greased and floured bundt pan or large loaf pan.

5. Bake at 325 degrees for approximately 45 minutes to one hour.

To "peel" means to remove the outer protective layer, commonly known as the "skin". A vegetable "peeler" is the most commonly used tool. However, a "paring knife", if used properly, will preform the task with acceptable results.
