1/3 Cup Honey
1/2 Teaspoon Salt to taste
1 1/2 Teaspoons Cinnamon
1 1/2 Teaspoons Baking Powder
1 Cup Oats
1 Cup Buttermilk sour milk
1/2 Cup Raisin
1 Cup Flour
1 Egg
1 Apple cored and grated

1. Heat oven to 350 degrees.

2. Spray muffin pan with no-stick cooking spray.

3. Stir together buttermilk, oats, and raisins in large mixing bowl and let stand while preparing remaining ingredients.

4. In separate bowl, blend whole wheat flour, baking powder, cinnamon, and salt.

5. Vigorously blend egg and honey into oats, buttermilk and raisins.

6. Blend dry ingredients into liquid ingredients just until mixed. Do not overmix!

7. Fold in grated apple.

8. Fill muffin cups almost full and fill any empty cups half full of water.

9. Bake at 350 degrees for 20 minutes.

10. Let muffins cool 5 to 10 minutes. Best served warm.
