Apple Pancakes with Cider Sauce

Ingredients:

1/2 Cup Sugar
1 Tablespoon Lemon Juice fresh
1 1/3 Cups Milk
1 Tablespoon Cornstarch dissolved in one tablespoon cold water
1 Egg beaten
1/8 Teaspoon Nutmeg ground
1/2 Teaspoon Cinnamon ground
1 Cup Apple Cider
2 Cups Biscuit Mix
2 Tablespoons Butter or margarine
1 Apple shredded

Directions:

1. Combine biscuit mix and cinnamon in a bowl.

2. Combine egg and milk; stir into dry ingredients until smooth. Stir in shredded apple.

3. For each pancake, spoon about 1/4 cup batter onto a hot lightly greased griddle.

4. Turn pancakes when tops are covered with bubbles and edges are brown.

5. Serve with Cider Sauce.

6. Makes about 13 4-inch pancakes (about half that if you make 'em big like I do).

7. Sauce: Combine first 4 ingredients in a heavy saucepan.

8. Gradually add apple cider and lemon juice.

9. Cook over medium heat, stirring constantly, until mixture boils. Cook 1 minute, stirring constantly.

10. Remove from heat, stir in butter or margarine.
