Ingredients:

1 Cup Sugar
2 Eggs whites
1/4 Cup Butter or margarine
1 Teaspoon Vanilla
1 Cup All-Purpose Flour
1/2 Teaspoon Salt to taste
2 Vanilla Beans
1/2 Cup Water cold
1 Teaspoon Lemon Juice fresh
1 Teaspoon Baking Powder
2 Cups Brown Sugar
5 Apples (up to 6)

Directions:

1. Pare, core and slice apples.

2. Melt butter in a deep, 9" round cake pan, add brown sugar and stir until well mixed.

3. Top with apples and sprinkle with lemon juice and peel.

4. Beat egg yolks and sugar until light and pale yellow.

5. Mix water and vanilla. Stir flour with salt and baking powder and add to egg mixture alternately with vanilla mixture.

6. Beat egg whites until stiff, fold into batter and pour over apples.

7. Bake at 350 degree F oven for 45 to 50 minutes.

8. Serve hot or tepid, and it is best not to unmold the pudding.
