1. Soften the gelatin in 1/2 cup apple juice in a 2-quart saucepan.
2. Add the remaining apple juice and cook over low heat until the gelatin is completely dissolved.
3. Sir in the lemon juice. Refrigerate for 45 to 60 minutes or until thick and syrupy.
4. Fold in the apple, carrot, celery, walnuts and raisins.
5. Pour into a 6-cup mold. Refrigerate for 2 to 2 1/2 hours or until set.
6. Meanwhile, prepare the HONEY DRESSING. TO SERVE: Unmold the gelatin mixture and spoon the honey dressing over the top.
7. HONEY DRESSING: Combine all of the ingredients, blending well.
