This is a great recipe with lots of flavor. I would recommend this to anyone looking to make a great cupcake.


1 Egg
1/4 Cup Sugar
1 Teaspoon Vanilla
1 1/2 Teaspoons Nutmeg
1/4 Teaspoon Salt to taste
1/2 Cup Margarine
1 Teaspoon Baking Soda
1 Teaspoon Cinnamon Ground
1 1/2 Cups Flour unsifted
1 Cup Unsweetened Applesauce
1/4 Cup Walnut chopped

1. Preheat oven to 375 F. Cream margarine until fluffy.

2. Beat eggs and sugar; add to margarine and blend.

3. Sift together dry ingredients.

4. Add to margarine mixture alternately with applesauce, mixing well after each addition.

5. Stir in vanilla and nuts.

6. Spoon into 12 cupcake pans sprayed with vegetable pan spray or use paper baking cups.

7. Bake 15-20 min.
